Born in 2027

Founded in 2027 in the heart of downtown Ottawa, AURA arose from a shared vision between Executive Chef Marcus Vance and Sommelier Elena Rostova. Their goal was straightforward: remove the pretension from fine dining while elevating seasonal Ontario ingredients to world-class standards.

Every element of our dining room—from the reclaimed white oak tables to the custom hand-blown glass light fixtures—was designed to reflect the raw elegance of the surrounding Canadian landscape.

Chef Marcus Vance

Following tenures at Michelin-starred kitchens across Paris and Montreal, Chef Vance returned home to Ottawa in 2027 to launch AURA. His culinary philosophy centers on hyper-seasonal sourcing, whole-animal butcheries, and zero-waste kitchen practices.
